it would definitely help to reduce the searing time. i did about 2 – 2.5 inches in size which will shrink down a bit after searing. hope that helps!

I just tried my first batch of these. Tasted great but I the beef seemed medium/well. What is the recommended size of each cube and would it help if I reduced the searing time?

I served them with redcurrant jelly.

Maybe substituting mushrooms for the foie gras would result in my wife cooking it more than once every few years.
