Just traveled in Spain and spent a few days in València – what a beautiful city!! And the home of paella – we took a paella class and made it with rabbit and chicken – wonderful! And the rice comes from the Valencia area, and was invented there, so I would say she knows what she’s talking about!!

If one crushes the saffron threads in a mortar and pestle (or, one could simply use the head of a cocktail muddler or a similarly blunt instrument to crush the threads in a small bowl), creating a fine powder, before one steeps the saffron in warm water, one will obtain a lot more color and flavor out of the saffron. Much more bang for the buck, this way, as opposed to simply steeping the saffron threads in warm water.

Make sure you use Spanish Chorizo not Mexican. The best one I’ve ever found was from Neto Sausage Co. Great authentic flavor with no mystery ingredients.
